You will report directly to Restaurant Manager with supported by the Hotel Sommelier across the Hotel working in partnership with a shared responsibility to implement Restaurant-specific programs & list changes.
Supporting the Head Sommelier in developing our food and wine pairings and providing wine knowledge and training to the Front-of-House team
Assisting in management of our wine list and cellar, and all which are available by the glass
Delivering our ethos and values to ensure a memorable customer experience
Providing the attention to detail that we need to push standards forward
Ensuring high levels of customer service at all times to always meet our guest’s expectations to enhance and maintain the Four seasons reputation
Building a strong product knowledge so our food, beverages and ethos can be communicated to guests
Working with the F&B management and kitchen to ensure clear communication to enhance the guest experience.
Do a weekly manual count of what is in the cellar. The Junior Sommelier is responsible for conducting inventory and knows the stock and dollars tied up in the wine cellar.
Coordinate with Hotel Sommelier to update wine program for the hotel in all outlets especially your own.
Update the newest releases to know what wines are hot on the market and coveted by the guests
Management of stock rotation, drinking windows and spoilage to be within tolerance of beverage cost targets across list composition including issues of shrinkage as well as maintaining an accurate list.
Achieving wine revenues & wine selling strategy based on the budgets.
You will be homed for service in assigned restaurant & only on demand from other venue will go and assist for wine service.
What You Will Bring
At least 2 - 5 years’ previous experience as Sommelier from restaurant or hotel or at least talented Bartender who familiar with wine selling.
Excellent knowledge of wines, Wine paring with food, also spirits and cocktails.
College education or equivalent experience;
Previous employment experience in a similar position with other luxury Hotels will be an added advantage
Requires ability to operate computer equipment and other food & beverage computer systems.
Requires reading, writing and oral proficiency in the English language.

Ability to proactively anticipate and prioritize the needs of the guest.
